Simple grilled lamb chops go well with Pinot Noir, Merlot, or a softer Cabernet Sauvignon. If there is a sauce that contains sweetness, fruit or hot spices, then a fruity white wine, preferrably with some sweetness, would be recommended and for a red a fruity Zinfandel would suffice.
